This was really refreshing. I added raisins as well.
I like the idea of macerating the apricots, usually I just toss dried fruit right into my salad. The dressing had a nice light flavour.
This is another recipe where I was trying something new and I'm glad I did. Super easy to make and nice and sweet and full of flavor even though there are not many ingredients. I forgot my walnuts at work and so I used slivered almonds instead and I'm sure it was just as good. It gave it a nice crunch!
