Ingredients

??? olive oil ???
??? onions, cut into thin rounds ???
??? carrots, cut into small pieces ???
??? leeks, cut into thin rounds ???
??? small potatoes ???
??? celery, diced into cubes ???
??? garlic, minced ???
??? vegetable broth ???
??? gluten free/wheat free shells elbows ???
??? zucchini, cut lengthwise and in sliced into 0.5m pieces ???
??? Italian parsley, fresh, chopped ???
??? Garlic and Cheese Croutons ???

Method

  1. Heat oil in a large saucepan and sauté onions, carrots, leeks, potatoes, celery and garlic. Stir regularly until the onions become soft.
  2. Add broth and bring to a boil. Reduce the heat, cover and simmer for 45 minutes, stirring from time to time, until all the vegetables are cooked.
  3. Add pasta and zucchini. Let it boil for around 10 to 15 minutes, until the pasta is al dente. Serve with garlic and cheese croutons. Before serving, garnish each bowl of soup with chopped parsley.
