Sweet Potato, Mango and Ginger Purée

Ingredients

1 sweet potatoes 180 g
1 mangoes 300 g
1/2 tsp gingerroot, grated 2 g
1 cup water 250 mL

Before you start

A blender or food processor will be very useful to make the purée.

Method

  1. Wash, peel and cut into chunks the sweet potato. Transfer to a steamer basket and cook until tender, about 20 min.
  2. Meanwhile, wash, peel and cut the mango into chunks. Grate the ginger.
  3. Put the sweet potato, mango, ginger and water in a food processor. Puree until it reaches a smooth consistency.

Observations

The fruit puree keeps up to 4 days in the refrigerator or up to 4 months in the freezer.
