Ingredients

7 cups baby spinach 120 g
6 button (white) mushrooms, thinly sliced 80 g
1 tbsp lemon, freshly squeezed 1/2 lemon
1/2 oranges, pressed and zested 90 g
1/2 tsp Dijon mustard 3 g
2 tbsp extra virgin olive oil 30 mL
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]

Method

  1. Prepare the spinach and put it in a large bowl. Set aside.
  2. Prepare the mushrooms: thinly slice them, then transfer to a small bowl. Season with salt and pepper,and pour in half of the lemon juice. Set aside.
  3. Grate half of the orange(s) to obtain the zest, then juice them. Put the zest and juice into a small bowl. Pour in the remaining lemon juice, mustard, and oil. Add salt and pepper to taste, then beat well using a fork, until the vinaigrette is emulsified. Pour the vinaigrette over the spinach.
  4. Peel the remaining orange(s), cut them into small pieces and add them to the spinach. Add the mushrooms and toss well.

    Serve.

I really liked the taste of this salad. The spinach with the mushrooms were good. Very good and the kids liked it too.
